Whats your Thanksgiving cornbread dressing recipe?

My mother has one but I dont like hers. She uses to much sage and adds apples and raisins. Its not bad its just not my kind of dressing. I want a good one with out fruit and isn't greenish brown due to the amount of sage and preferably doesnt call for white bread. If any one has one please share.Whats your Thanksgiving cornbread dressing recipe?

sage

cut up giblets and sometimes a boiled egg.

butter or margarine

saut茅 1 cup of onions and 1 cup of celery (string it first)

add stock to (crumbled up)cornbread and bread mix.

add the rest and season to taste with salt and pepper.

CAJUN CORNBREAD DRESSING

2 tsp. salt

1 1/2 tsp. white pepper

1 tsp. red pepper

1 tsp. oregano leaves

1/2 tsp. onion powder

1/2 tsp. thyme leaves

For seasoning mix, combine, mix thoroughly and set aside.

DRESSING:

1 stick unsalted butter

3/4 c. onion, chopped

3/4 c. green pepper, chopped

1/2 c. celery, chopped

1 tbsp. garlic, minced

2 bay leaves

1 lb Polish smoked sausage, chopped

1 c. chicken broth

1 tbsp. Tabasco sauce

5 c. crumbled buttermilk cornbread

1 1/2 c. evaporated milk

3 eggs

In a large sauce pan, melt butter and add onions, bell pepper, celery, garlic and bay leaves and cook over high heat. Saute about 2 minutes, stirring frequently. Add the seasoning mix and continue cooking 5 minutes. Stir in the sausage, chicken broth and Tabasco sauce. Cook 5 minutes more stirring frequently. Turn off heat. Add the cornbread, milk and egg. Spoon dressing into a greased baking dish. Bake at 350 degrees until browns on top for about 40 minutes.
I usually boil a chicken in water seasoned with salt, pepper, and a couple bouillon cubes a couple days in advance to get the broth. After it's cooled, I can take off the fat. (use the chicken for chicken salad).

I bake a skillet of cornbread. Cool, crumble and let set to dry overnight. Chop onions, celery, and hard boiled eggs if desired. Saute the onions and celery in butter.

I mix the cornbread with the onions, celery, warm broth, a can of cream of chicken soup, garlic bits, salt and pepper and three beaten eggs. I like it pretty ';sloppy'; so it doesn't get dry in the oven. I do not like sage but if you like a little of it, add it. Bake at 400' till bubbly. My family likes oyster dressing so we add a pint or so of fresh oysters along with the juice. If we can't get fresh ones, canned ones will work.
1 large yellow onion, diced

3 stalks celery, chopped

2 eggs, beaten

2 cubes butter or margarine

1 lb. Turkey Italian Sausage

2 boxes Mrs. Culbretson's cornbread stuffing mix

Chicken broth, or stock, heated (at least 1 cup or more)

Saute celery and onion in butter (all of it) until translucent. Add to dry cornbread mix. Saute sausage (casings removed) until crumbly and cooked thru. Add to mix. Add beaten eggs and mix. Add chicken broth or stock until moistened but not too damp. Season with fresh ground pepper. You may stuff your turkey at this point or put in baking dish. I cook mine in a slow cooker for several hours so that I can keep my oven open for other dishes. Yum!
