Maybe a bit more moisture. Try adding a couple of egg whites or an egg or a bit of milk (or cream.)

Personally, I would try the egg whites first. They add moisture %26amp; they are a binding agent.Need help with cornbread recipe plzzz?
i use the jiffy mix and i follow the directions, however i also add a half a can of creamed corn and a dollop of butter... never once has it been dry.... hope you try it...
it needs more moisture, add more whatever type of fat you are using.
You might try adding a bit of AP flour to the mix. That should help with the hold togetherness of the cornbread.

Also, try letting the mixture rest for a few minutes before putting into the baking vessel.
You might want to add a bit more moisture- most likely a tiny bit more shortening.

Add 1 more egg to the batch your mix is too dry.
You should add either some vegetable oil or melted butter/margarine. For a typical 8-9'; pans worth add a few tablespoons worth. If you can get Albers corn meal there is an excellent recipe on the side of the bag.
