well here we go ready





it is pretty easy cornbread chicken stuffed squash with parmesan cheese


in a large glass bowl take corn bread i am sorry about measurements i cook by eye and obviously always overcook.


again cornbread,pulled or cubed chicken pieces i like pulled pepperoni black olives and parmesan cheese combine all these ingredients in a bowl with black pepper garlic belles seasoning and paprika a few red pepper flakes to spice it up add cinnamon 2 eggs combine it all tocether and make a stuffing a dash of nutmeg and a teaspoon of vanilla





next each person will get there own squash half so cut your squashes in half and take out seeds stuff each squash place them all on baking sheets and cook at 350 for 45 mins or until squash is tender when pricked with a fork

Halloween Chicken Pizza Masks


1 pound ground chicken


1/3 cup chopped onion


1 teaspoon salt


1/2 teaspoon pepper


1 package (6 count) English muffins, split


2 tablespoons soft margarine, divided use


1 1/2 cups bottled pizza sauce, divided use


1 teaspoon oregano


1 large green pepper


4-ounces shredded Cheddar cheese


4-ounces shredded mozzarella cheese


3 large pitted ripe olives, each sliced into 4 rings


Heat frypan to medium-high temperature. Add ground chicken and onion; cook, stirring, until all red is gone, about 6 minutes. Set aside.


With aluminum foil, cover 10 1/2 x 15 1/2-inch baking pan.


Spread each muffin half with 1/2 teaspoon margarine and arrange in single layer on prepared pan.


Spread heaping tablespoon pizza sauce on each muffin half. Cover generously with ground chicken and onion; sprinkle with oregano.


Cut 12 slivers of green pepper into ';smiling'; mouth shapes and set aside; chop remaining pepper and sprinkle on pizzas.


Mix together Cheddar and mozzarella cheeses; sprinkle generously on mini-pizzas.


Bake in 450 degrees F. oven about 12 minutes. Remove from oven.


Make mask face on each pizza by using 2 ripe olive rings for eyes and pepper slice for mouth. Turn some slices up for smiles and some down for frowns.


Makes 12 mini-pizzas.





Baby Pumpkins with Garlic Custard





Ingredients


6 small pumpkins


1/3 cup heavy cream


1/3 cup whole milk


1/2 teaspoon minced garlic


1 tablespoon finely shredded parmesan cheese


2 eggs


1/8 teaspoon salt


1/8 teaspoon freshly ground white pepper








Preparation


1. Preheat oven to 400掳. Bake pumpkins until just tender, about 20 minutes. Cut off tops and set aside, then scoop out seeds.


2. In a medium bowl, whisk together heavy cream and whole milk with garlic, parmesan cheese, eggs, salt, and white pepper. Pour mixture into a measuring cup.





3. Arrange pumpkins in a baking dish large enough to hold them without crowding. Divide custard mixture among pumpkins and cover with tops. Pour enough water into dish to reach halfway up sides. Bake until custard jiggles only slightly, about 30 minutes. Remove from dish and let cool 5 minutes.
