Anyone have a good mexican cornbread recipe?

I would love to try Mexican cornbread, but don't have any recipes. Can you help me out?Anyone have a good mexican cornbread recipe?

1 1/2 cups corn meal


1 cup light sour cream


1/3 cup vegetable oil


2 eggs


4 jalapenos -- chopped


2 tablespoons green pepper -- chopped


1 cup creamed corn


1 cup Cheddar cheese (light) -- grated


1 tablespoon baking powder





Mix all ingredients together except cheese. Pour half of mixture into a hot


, greased cast iron skillet (I usually use a square glass baking dish). Sprink


le half of the cheese over the cornmeal mixture. Pour remaining cornmeal mixtu


re into skillet (or baking dish) and top with remaining cheese.


Bake at 350 for 40-45 mins. Allow to cool %26amp; set about 15 mins. before servi

NOTES : Baking time may vary. I have had trouble with the cornbread not being


done after baking according to directions, perhaps due to using the glass bakin


g dish instead of the skillet. I recommend checking the cornbread for doneness

1 陆 C. Cornmeal


1 Can Cream Style Corn


Sharp Cheddar, shredded (12oz) or (to taste)


1 C. Buttermilk Jalapenos (6TBS)or (to taste)


3 eggs Chopped Onion (1 large) or (to taste)


戮 cup Vegetable Oil





Heat oven to 400 degrees. Put the 3/4 cup oil in a large iron skillet and put it in the oven to get hot. Mix all remaining ingredients(except cheese) in a large bowl. Remove the skillet from oven and pour oil into the cornbread mixture. Stir well. Pour half of mixture in to iron skillet then spread sharpe cheddar evenly leaving at least 1/2 inch away from the edge of skillet, (this is to prevent sticking to the side when done). Pour the remaining cornbread mixture in making sure the cheese is covered. Place in oven at 400 degrees for approximately 1 hour. Cornbread will be dark brown. Run a knife around the inside edges between the cornbread and the skillet then place a large plate over the skillet and flip it carefully. Serve hot.
if you want the short version any corn bread mix to package directions then drain a small can of Mexican style corn in the can and add to the mix before shoving it in the oven
