I need a good mexican cornbread recipe?

INGREDIENTS:


2 cups corn meal


1/3 cup melted shortening


1/2 tablespoon salt


1 tablespoon sugar


2 eggs


1/2 teaspoon baking soda


3/4 cup buttermilk or milk


1 can cream-style corn


1 can chopped green chile peppers (4 oz)


1 cup of shredded cheddar cheese


PREPARATION:


Preheat oven to 450掳. Mix corn meal, shortening, salt, sugar, eggs, soda and milk. Add corn and chile peppers. Pour half of mixture in large, greased 9-inch pan. Put half of grated cheese over batter.





Spoon remaining batter into skillet or pan and top with remaining cheese. Bake at 450掳 for 25 minutes.I need a good mexican cornbread recipe?
Mexican corn bread





Yield: 8 servings





1 c Whole-wheat flour


1 c Cornmeal


4 ts Baking powder


1/2 tsp Chili powder


1/4 c Honey


1 Egg


2 Tbsp Applesauce


1/3 c Water


1/4 c Onion; chopped fine


1/4 c Green bell pepper; chopped fine


2 Tbsp Pimiento; chopped


3 Tbsp Green chiles; chopped





Mix dry ingredients together. Mix moist ingredients


together along with chopped vegetables. Add dry ingredients to wet ingredients. Mix. Place in lightly oiled or non-stick 8 inch square baking pan. Bake at 400 degrees for 30 minutes.I need a good mexican cornbread recipe?

Grandma's MEXICAN CORNBREAD





1 lb. ground beef


1chopped onion


3 tablespoons chili powder (I use Gebhardt's)


1 to 1.5 lbs. shredded mild cheese (yellow or white)


1 lg. onion, chopped


1 can cream corn


1 can (or package frozen) whole kernel corn, thawed %26amp; drained


2 Recipe cornbread per the box or bag


Jalapenos to taste





Cook and drain ground beef with onions and chili powder. Mix cornbread as directed on package. Add both cans of corn and mix in Jalapenos. Grease pan and add half of cornbread mix. Add beef, onions, jalapenos and cheese. Top with remaining cornbread mix m ore cheese some finley chopped onion and more chopped Jalapenos. Bake at 350 degrees for 45 to 60 minutes.
