I use Pamela's Gluten Free Baking mix, this way I do not have to buy several flours when I want to make quick breads like cornbread. I get them at my local grocery store %26amp; sometimes Amazon has it on sale.

Corn Bread/Muffins


1-1/4 cup Pamela's Baking %26amp; Pancake Mix


1 cup fine yellow cornmeal


1/3 honey (This can be left out is you don't like sweet cornbread. Some times I use Agave Nectar or Maple Syurp instead)


1/2 teaspoon salt


1 egg, beaten (for fluffier muffins use two eggs)


1 cup milk


2 tablespoons melted butter *( I use Coconut Oil/Butter)





Muffins: Mix all ingredients together and fill greased muffin tin 3/4 full. Bake at 375掳 for 15-20 minutes.





Corn bread: Follow directions above, using two eggs. Pour into a greased 8-inch square pan. Bake for 20-25 minutes.





Variation: Add 1 cup drained canned corn and 2 tablespoons diced green chilies to dough when mixing. Bake for 20-25 minutes until an inserted toothpick comes out clean.





If you are new to Gluten Free Baking it is not possible to do a 1 on 1 subsitute for Wheat Flour to a GF Flour. This is why I like a mix. If you new more help or want a 100% from scratch recipe here's a site for you.

Cornbread Deluxe (Gluten-Free)


In a blender process until smooth:


1 cup milk or rice milk or soy milk or buttermilk or water


1 egg or 2 egg whites


录 cup oil (canola or safflower)


录 cup pure maple syrup





In a separate bowl, mix these dry ingredients with a wire whisk:


1 cup cornmeal


1 cup rice flour (brown or white or a combination of both)


2 teaspoons baking powder


1 teaspoon baking soda


录 to 陆 teaspoon xanthan gum


录 to 陆 teaspoon salt





Combine the wet and dry ingredients and mix gently but well for about one minute, then pour into a 8 or 9 square baking pan that has been sprayed or oiled. Bake at 400F for 25 minutes. Serve warm, directly from the pan, or let cool for 5 to 10 minutes.





For a savory meal:





Using a 9 x 12 pan (or close to it), spray or oil it, then put in:


1 large can diced tomatoes (28 oz.)


1 can drained beans (like pinto, black bean, garbanzo, or whatever you like)


1 or 2 diced zucchini


Some other vegetable you like, corn, mushrooms, diced red or green bell peppers etc.


Sprinkle on chili powder or pizza flavorings like basil and oregano to your taste


Then pour cornbread mix right on top and bake 25 to 30 minutes at 400F.





For a dessert cornbread:





On the bottom of the pan, pour a can of fruit cocktail or sliced peaches or a can of pie filling


To the dry ingredients add: 录 cup sugar, then bake as above.





For a Gingerbread:





Add 录 cup molasses to the wet ingredients





To the dry ingredients add:





2 teaspoons ground ginger


1 teaspoon ground cinnamon


录 teaspoon ground cloves


Optional: grated fresh ginger or finely chopped candied ginger, or both





To make it more cake-like, decrease the cornmeal to 陆 cup, and increase the flour to 1 陆 cups


Bake as the original recipe.
Hi. I make gluten free cornbread by just following the directionso n the Aunt Jemima package. To not use the refined sugar, I would assume you could use splenda for baking possibly.
