Need different recipes - along the lines of cornbread?

I made some cornbread muffins the other day and my husband ate them up like there was no tomorrow.





I'm looking for a new recipe to make besides the regular cookies, brownies, sweets, etc.

You can make the same muffins more interesting by adding ingredients, such as creamed corn, chopped green peppers, jalapeno, onions, etc., or make them sweet by adding grated apple, pear, strawberries, etc. Cornbread also makes a nice, dumpling type topping when spooned over chili, then baked in the oven. There are endless ways to keep it interesting. Have fun with it!Need different recipes - along the lines of cornbread?
Cheese and Dill Cornbread





鈥?3 cups all-purpose flour


鈥?1 cup yellow cornmeal


鈥?1/4 cup sugar


鈥?2 tablespoons baking powder


鈥?2 teaspoons kosher salt


鈥?2 cups milk


鈥?3 extra-large eggs, lightly beaten


鈥?1/2 pound (2 sticks) unsalted butter, melted, plus extra to grease the pan


鈥?8 ounces aged extra-sharp Cheddar, grated, divided


鈥?1/3 cup chopped scallions, white and green parts, plus extra for garnish (3 scallions)


鈥?2 tsp dried dill


Directions


Combine the flour, cornmeal, sugar, baking powder, and salt in a large bowl. In separate bowl, combine the milk, eggs, and butter. With a wooden spoon, stir the wet ingredients into the dry until most of the lumps are dissolved. Don't overmix! Mix in 2 cups of the grated Cheddar, the scallions and dill allow the mixture to sit at room temperature for 20 minutes.


Meanwhile, preheat the oven to 350 degrees F. Grease a 9 by 13 by 2-inch baking pan.


Pour the batter into the prepared pan, smooth the top, and sprinkle with the remaining grated Cheddar and extra chopped scallions. Bake for 30 to 35 minutes, or until a toothpick comes out clean. Cool and cut into large squares. Serve warm or at room temperature.


Note: This makes a big pan full, what I do is take out what we'lll eat for one meal and break up the rest in bags and put in freezer.
Dark Double Chocolate Cookies


1 1/4 cups all purpose flour


1/2 cup cocoa powder


1/2 tsp baking soda


1/4 tsp salt


1/2 cup butter, room temperature


1 cup sugar


1 large egg


1 tsp instant espresso powder (optional)


1 tsp vanilla extract


1 1/4 cup semisweet or dark chocolate chips

Indian Fry Bread





there are many different recipes for it, but all include very basic ingredients. Look it up and pick one that you like, it's very good and very easy to make
If a cornbread recipe is what you are looking for; and you like to eat something with a little spice, try adding a half jar a jalapenos. Yum!
