Looking for recipes that use left over cornbread?

I split it, butter it, and toast it under the broiler. It's yummy with eggs and bacon for breakfast or as a side with fish or chicken for dinner.Looking for recipes that use left over cornbread?
CHICKEN BROCCOLI CASSEROLE


3 whole chicken breasts


2 pkg frozen broccoli spears (thawed)


2 cans cream of chicken (or broccoli) soup


juice of 1/2 lemon


1 c. mayonnaise


1/2 tsp. curry powder


about 2-3 c. crumbled cornbread


1/2 c. butter


Cook %26amp; dice chicken breasts. Mix together lemon juice, curry, soups %26amp; mayonnaise. Melt butter and add to cornbread. Layer as follows in a casserole dish: broccoli, chicken, mayonnaise mixture and cornbread. Bake, covered with foil, for 30 min at 350. Remove foil and bake another 15 min. I make chili and then serve it over the cornbread. Chilis are like snow flakes, they're all different. I don't use a recipe. I usually brown some meat while my bean, salsa, etc. slowly heat up and then I add the meat and let it cook for an hour or so. Top with cheese and sour cream. It is great the next day too.
mmm I love summer squash casserole.





Saute summer/yellow squash and onions in butter then mix in with the cornbread and bake. Sprinkle top with cheddar cheese, that is soooo good!





Spoon-bread or succotash uses cornbread too
the easiest one i know.


get a bowl crumble bread into the bowl.


pour milk in the bowl.


get a spoon and start eating.
Cornbread stuffing.
My favorite is turkey giblets and gravey mixed with cornbreat lightly toasted dry. Some lightly sauteed onions and celery add some crunch. Yumm!!!
crumb the cornbread and replace breadcrumbs with it in any recipe calling for it.
cook some beans corn bread and beans are like Pb%26amp;j they always are great together :)
