I need a recipe for indian cornbread?

my grandfather made it when i was young, its a flat but mushy in the middle.I need a recipe for indian cornbread?
Indian Cornbread Ingredients





3 cup yellow cornmeal


1 1/2 cup flour


1 can evaporated skim milk


4 each egg


4 oz sour cream, light


4 oz cheddar cheese -- grated


1 can creamed corn


1 jar pimentoe


2 tsp cunmin


1 tsp salt

Ingredients


4 medium corn muffins or 8 corn toaster cakes, cut into 1/2-inch cubes


(5 cups)


2 2/3 cups whole milk


4 large eggs


4 tablespoons molasses


1 teaspoon ground ginger


Pinch salt





Instructions


Serving suggestion: Butter pecan or maple walnut ice cream.


Special equipment: 6 to 8-cup ceramic baking dish or ovenproof ceramic bowl





Preheat oven to 275 degrees F.





Put cornbread cubes in baking dish. Whisk together milk, egg, molasses, ginger, and a pinch of salt and pour over bread. Let stand 5 minutes.





Bake on a baking sheet in middle of oven until edge of custard is just set and center is still


wobbly, 40 to 45 minutes. Cool pudding until warm (it will continue to set as it cools).
Indian cornbread is also referred as Corn Pone or Indian Pone.


Tips for making the Cornbread: Dough must be firm enough that it can be shaped into individual pones the size of a biscuit. Do not pat too firm as this will make the pone crack when baked. They're great with butter, stew or gravy.





Indian Cornbread or Corn Pone # 1


鈥?1 cup cornmeal 鈥? One-half teaspoon salt 鈥?1 teaspoon baking powder 鈥?2 tablespoons bacon drippings 鈥?One-half cup milk


Stir together the cornmeal, baking powder and salt. Add the bacon drippings and milk. Stir well. Making about 4 pones (flattened circles) for each bowl of batter, plop the batter onto a greased cast iron skillet. Cook until golden brown on each side, flipping once. Pass the butter and enjoy.





Indian Cornbread or Corn Pone # 2


鈥?4 cups corn meal 鈥?2 tsp baking powder 鈥?2 tsp salt 鈥?2 cups sugar 鈥?6 cups boiling water 鈥?1 Stick Butter 鈥?5 beaten eggs 鈥?3 cups milk 鈥?1 large can Carnation milk


Sift corn meal into large pot. Add baking powder, salt and sugar. In separate pot, boil water; add butter and bring to full rolling boil. Pour over corn meal mixture to scald. In separate bowl, beat eggs, then add milk to eggs. Add to corn meal mixture and mix well. Pour into greased 9x9-inch pans.Bake at 400 f degrees for 40 minutes. Test with toothpick





Indian Cornbread or Corn Pone # 3


鈥?2 1/2 c. cornmeal 鈥?4 c. hot water 鈥?1 c. sugar 鈥?3 eggs, beaten 鈥?2 c. milk 鈥?1 stick butter 鈥?2 1/2 tsp. salt


Mix all the ingredients together in a large saucepan. Cook on top of the stove, stirring constantly until mixture boils and is very thick. Pour into greased glass cooking dish and brown in the oven for 30 minutes at 450 degrees.





Indian Cornbread or Corn Pone # 4


鈥?2 cups white cornmeal 鈥?1 cup water boiling 鈥? teaspoon salt 鈥?2 tablespoons vegetable shortening melted (lard or Crisco) 鈥?Cold water


Pour boiling water over salted meal, stir quickly and cover with a close fitting lid for 2 or 3 minutes. Add melted fat, stir, then add enough cold water to make soft dough.


Place the pones on a well greased pan and bake 10 minutes in 400掳 oven then reduce heat to 350掳 for 35 minutes. Serve with butter
