INGREDIENTS
1 cup cornmeal
1 teaspoon salt
1 teaspoon white sugar
1 tablespoon shortening
3/4 cup boiling water
DIRECTIONS
In a medium bowl, combine cornmeal, salt, and sugar. Add boiling water and shortening; stir until shortening melts.
Pour oil or bacon fat to a depth of 1/2 inch in a large skillet and heat to 375 degrees F (190 degrees C).
Shape cornmeal mixture into flattened balls using a heaping tablespoon as a measuring guide. Fry each in hot oil, turning once, until crisp and golden brown, about 5 minutes. Drain on paper towels. Serve at once with maple syrup or honey. Does anyone have any good fried cornbread recipes?
1 1/2 cups self-rising cornmeal
1/2 teaspoon salt
2 cups boiling water
1 Mix cornmeal and salt together in large mixing bowl.
2 Pour approximately 2 cups boiling water over dry ingredients.
3 Mix well.
4 After the mixture cools slightly, shape mixture into balls about the size of golfballs, one at a time. You must wet your hands with water before you make each ball.
5 Flatten the ball with your fingers.
6 Fry in skillet (preferably cast iron) with about 1/2 inch of hot oil.
7 Fry until golden brown on both sides.

2 c. self-rising corn meal
3/4 c. milk
1 small onion, finely chopped
1 egg, slightly beaten
Dash of garlic powder
Vegetable oil or shortening
Combine corn meal and onion and garlic powder. Add milk and egg stirring well.
Carefully drop by tablespoon into deep hot 370 degrees oil. Cook only a few at a time, turning once. Fry until hush puppies are golden brown (3 to 5 minutes).
Drain well on absorbent towels. Excellent when fried in the same oil that fish was fried in.
Yields about 2 doz.
This makes about a dozen hush puppies.
1 egg beaten
2 Tbsp. sugar
1/2 large onion
4 Tbsp. milk
Mix these ingredients together.
1/2 C. self rising flour
1/2 C. self rising corn meal
add this to egg mixture.stir well,let sit about 10 minutes.Batter will be REALLY thick. Drop by spoonfulls into oil heated to around 360 degrees.I deep fry them but you can also fry them in a couple of inches of oil turning them after they have browned.If your family does not like onion you can omit it.I made these last night for dinner with fried fish.

dice one onion
dice one bellpepper
and if you like spicy add diced jalepeno
batter up, get grease/oil hot .....then drop spoonful in pan, making flat like pancakes...hmmm, something like ';hocakes'; flat hushpuppies.. now that is good eating, dip in ketchup...yes...
